Ingredients

  • 100g/4oz light muscovado sugar
  • 1 star anise
  • 1 cinnamon stick
  • 4 cloves
  • 150ml water
  • 1 lemon
  • 2 clementines
  • 150ml Cointreau
  • 750ml/ 1 1/4 Pint Bottle Light Red Wine, Beaujolais
  • To serve, add a twist of orange zest and a star anise.

Method

  • STEP 1Combine 100g of light muscovado sugar with 150ml water. Slowly bring to boil. Stir to dissolve sugar.
  • STEP 2Let it simmer for 2 minutes, then strain into a large glass jar and let cool. To the jug, add 1 lemon and 2 clementines, each thinly sliced. Mix well and cover the jug. Chill for at least 2 hours or overnight, if possible.
  • STEP 3Serve chilled or on ice with orange zest and star anise. Warm mulled wine can be served warm, but you don’t need to chill it. Simply heat through and pour into heatproof glasses.
